When I read the origin of Gibberish, and the meaning...I had to laugh out loud. Being Irish myself, I am not offended in the lest bit. I think there tends to be a grain of truth behind two things: stereotypes and jokes. But then again, most people who know me also know that I am an equal opportunity offender. "Gibberish" could be from the Celticgibber, or the Gaelic gabairechd, meaning unintelligible talk. It could even be a play on "gob" or "gab. ":
